Summer Loving Plant-based Recipes

As the temperature warms up, our love of baking and using the stove tends to wane. To keep things cool, try some of our plant-based recipes that not only look amazing, but also taste delicious. Keep in mind that if you do have to cook, some items can be pre-cooked in the morning to save you time – so you can spend more time enjoying the beautiful summer weather. Breakfast:

Tropical Smoothie Bowl - Prep-time 5 minutes. Start your day with this refreshing bowl of sunshine - packed to the brim with fresh fruit and topped with crispy, whole-grain cereal! This one tastes like a day at the beach! 

Lunch:

Open-Faced Mango Chutney Sandwich Prep time: 15 minutes. No more boring sandwiches for you! This quick, homemade mango chutney is packed with refreshing flavors and Vitamin C (and unlike a prepackaged chutney, there's no added sugar here)! 

Dinner:

Spinach Quinoa Salad with Pomegranate Dressing Prep-time: 25 minutes. This colorful salad is positively packed with plant power! Contains Iron, Calcium, Zinc, Vitamin B6, and Niacin! The perfect nutritious dinner for a warm summer night. .

 

Snacks:

Berry Cocktail from The 22-Day Revolution Cookbook

Prep Time: 10 Minutes

Serves 4

Ingredients:

1 cup fresh strawberries, washed, hulled, and quartered lengthwise.

1 cup fresh blackberries, washed.

1 cup raspberries, washed

3-4 fresh oranges, squeezed (about 1 cup)

fresh mint, for garnish.

Preparation:

  1. Evenly divide the berries into 4 serving glasses.

  2. Pour freshly squeezed orange juice into each glass, garnish with mint and enjoy!
