5 Healthy Frozen Vegan Treats

Summer is in full swing, and you might be desperately searching for a way to cool off. If a backyard pool or the beach is not in your future, try some frozen vegan treats instead. They’re healthy, filling, and also delicious – which makes them a terrific way for you and your family to stay cool.

Frozen Fruit

The most important ingredient you’ll need for frozen vegan treats is frozen fruit. Whether you buy it pre-packaged or freeze your own, cold fruit is a perfect way to cool down and enjoy an easy treat.

If you find you balk at the price of frozen fruit at the supermarket, invest in some freezer bags and head to a farmer’s market or roadside fruit stand. Pick up a big basket of whatever fruit is currently in season (such as apricots, peaches, cherries, strawberries or blueberries), take it home and freeze. Odds are you’ll have enough to last until winter!

Vegan Popsicles

Assuming you have molds for the popsicles to go into, you can get creative with mixtures and try them out. A good vegan popsicle follows the same principle as a smoothie – you want some fruit, veggies, a liquid base (coconut milk, almond milk, water, etc.) and perhaps a few extras like our Plant Protein Powder, chia, cocoa, or chunks of fruit. 4. Watermelon Popsicles

Here’s how to make these gorgeous pops featured above:

Ingredients:

4 cups seedless watermelon cubes

3 kiwi peeled and chopped

1-2 tablespoons of maple syrup, optional to sweeten the kiwi layer

Instructions:

1. Put the watermelon cubes in a blender or food processor and blend on until smooth.

2. Pour watermelon into popsicle molds, filling each one about two-thirds full.

3. Add popsicle sticks at this stage as you won’t be able to once it’s been frozen.

4. Freeze until watermelon is firm, about 2 hours.

5. Blend kiwi and maple syrup until smooth.

6. Pour the kiwi mixture into the popsicle molds and freeze at least 4 hours.

Sorbet

You can up your frozen treat game by trying out sorbet – that is, pure fruit ice cream. If you have a good food processor or high-speed blender, you’ll be amazed at how easily you can whip up a sorbet with just frozen fruit and little to no sweetener. Here’s an easy recipe to try:

5. Pineapple Nice Cream

Ingredients:

2 cups frozen pineapple chunks

½ teaspoon lime juice

2-3 tablespoons of water, if needed

Instructions:

  1. Place frozen pineapple and lime juice in high-speed blender
  2. Start on low and slowly increase speed to high
  3. If mixture is not blending completely, add a bit of water until it starts to move through the machine
  4. Blend for 30 seconds.
  5. Enjoy immediately or pour into a container and freeze until ready to enjoy.
