Quinoa & Sweet Potato Salad Recipe

Makes 2 servings

Ingredients:

1 small to medium-size sweet potato

1 cup cooked quinoa

¼ cup pumpkin seeds

¼ cup dried cranberries

For the Dressing:

1 orange, juiced

1 lime, juiced

1 teaspoon Dijon mustard

Fresh ground pepper, to taste

Sea salt, to taste

Preparation:

  1. Wash sweet potato and cut into cubes
  2. Steam for 15 minutes or until fork tender
  3. In a large bowl, toss sweet potato, quinoa, pumpkin seeds and cranberries
  4. Whisk together dressing ingredients in a separate bowl
  5. When ready to serve, drizzle quinoa and sweet potato mixture with dressing and toss to combine. Season with salt and pepper to taste.
